The Georgia Peach Council declared April 13th National Peach Cobbler Day during the 1950's. Since peak peach season does not technically begin until July, they created this holiday in order to sell canned peaches during the off-season. We have two great ways to celebrate this year, a delicious home-made peach cobbler recipe and the irresistible taste of our beloved vaulted Five Pawns flavor, Lucena. One of our original blends from the past that captures the characteristics of dark spirits is our spiced rum mixed with a juicy, clingstone white peach. This flavor harmony mimics a peach cobbler with a savory rum reduction and is garnished with a freshly shaved hazelnut. Available for a limited time.
12 fresh peaches, pitted and sliced or two 10 oz. cans of sliced peaches
1 oz Orange juice, fresh squeezed
11 cup water
1 cup white sugar
1 (18.25 ounce) package white cake mix
1/2 teaspoon ground cinnamon
1 (8 ounce) package cream cheese
1/2 cup butter
Preheat oven to 350 degrees F. Spread peach slices evenly into a 9x13 inch baking dish. If using fresh peaches, combine water and sugar in a small bowl. Stir to dissolve, then pour mixture over peaches. If using canned sliced peaches, pour the remaining peach juice over peach slices. Combine cake mix and cream cheese in a food processor and blend until crumbly. Sprinkle cinnamon over peach slices, followed by cake/cream cheese mix. Dot the cobbler with butter or margarine. Bake in preheated oven for 45 minutes, until golden.
Baker's Tip: Garnish with a scoop of vanilla bean ice cream and shaved hazelnuts while the cobbler is still hot for added flavor.
